1. Why did food insecurity rates drastically increase during the recession beginning in 2008?

Answer: the rate drastically increases because the number of households getting government aids (SNAP) formerly known as Food Stamps rose significantly. The number of households benefiting from this public food assistance program has increased by 68 percent since the start of the recession in December 2007, and the number of benefits households have received has also increased. The increases in beneficiaries and benefits of SNAP illustrate the importance of having strong public structures that protect the country in times of emergency.

2. As explained in this chapter, the United States has not ratified the international covenant on the human right to adequate food. Why do you think this has not happened? What could be done to encourage adoption of this document?

Answer: According to the Universal Declaration of Human Rights, article 25, Everyone has the right to a standard of living adequate for the health and well-being of himself and of his family, including food, clothing, housing and medical care and necessary social services, and the right to security in the event of unemployment, sickness, disability, widowhood, old age or other lack of livelihood in circumstances beyond his control.  To improve methods of production, conservation and distribution of food by making full use of technical and scientific knowledge, by disseminating knowledge of the principles of nutrition and by developing or reforming agrarian systems in such a way as to achieve the most efficient development and utilization of natural resources, taking into account the problems of both food-importing and food-exporting countries, to ensure an equitable distribution of world food supplies in relation to need.

3. In perspective 5.4, Janet Poppendieck argues for universal school meals. What are the main counterarguments to her perspective? What is your opinion?

Answer: Janet Poppendieck argues for food to be integrated into the school curriculum and offer them without a charge as part of the school day but the counter argument for that is parental responsibilities for the child’s upkeep during school hours would be shifted to the government which would also cut into the tax payers’ money. I feel if all parties (both parents and the government) the children would live healthy, when the parents provide adequate lunch and the school sees to it that they are properly consumed at the appropriate time, then their would-be little problem on the child’s health in general.

4. Perspective 5.2 and 5.3 present two views about whether SNAP benefits should be permitted for use in purchasing items such as sugar sweetened beverages. Which arguments did you find most persuasive on each side? More broadly, what is your opinion? There are some stakeholders n both sides of the issue who may be motivated by concerns other than those they state. What might these concerns be?

Answer: I think I’ll go with perspective 5.3, a defense of excluding foods of minimal nutritional value from SNAP, my opinion is that each individual as the right to eat what they like but proper education as stated in the chapter is needed on what healthy living is and also as it was stated in the text that one’s opinion is very hard to change but once the mind is rightly tuned with good education, then healthy living would be a watchword for those in the SNAP program as it aims to alleviate hunger and improve the nutrition and health of low-income people.

5. American Indians and Latino immigrants have high rates of food insecurity and are more among the communities most difficult to reach. Knowing the complexity of food insecurity, what structural factors do you think affects these communities, which may increase their food insecurity rates? How might they be reached more effectively?

Answer: living location, food choices, taste preferences, personal and social factor, employment status, acculturation, access to personal transportation, time, knowledge, skill and abilities, availability of food preparation and storage equipment, food prices.

How they could be managed effectively?

Environmental interventions to address challenges to food access show some promise. Approaches at the environmental level might include transportation policies that address both affordability and routes, and incentive/financing programs to increase the number of and quality of supermarkets in low-income, minority communities. Make more outlets to good food and at affordable prices, make proper transportation ready for the community especially for those who do not have personal means of transportation, make storage facilities to farmers at good prices so they can store their food properly without adding any preservatives which would have negative effects on the consumers.
